Eskilerden


Hüseyin’le konuşuyoruz da… Eskilerden… Hatırladıklarım var, benden eski olanlar var…

Dede’yi hatırlıyorum mesela. Taş Kahvenin yanında, üç tekerlekli arabasında tost yapan Dede. Kara kuru, ufarak bir adamdı. Tostu kağıda saracağı zaman, parmağını tükürüklemez, domates suyuyla ıslatırdı. Bunu gördüğüm günden sonra başka tostçuya gitmemiştim. İşi bilen bir arkadaşıma fotoğraflarını çektirmiştim gizli gizli. Çok şeyler değişti o zamandan beri. Benim bu dediğim belki on beş yıl önce. Şimdi torunu yapıyor tostu. Tabii ne o araba kaldı ne de Dede. Ama tost dükkanının  adı hâlâ aynı.

İki tostçu daha varmış daha eskiden. Biri, Kör Ahmet. Dedeyle aynı zamanlarda tostçuluk yapmışlar. Sonra Mikro Mustafa eklenmiş. Hepsi Taş Kahvenin civarında, sezondan payını almaya çalışırmış. Sezon da, bugünkü gibi değil elbet. Buraları bilen bir avuç insan.

Kışın domates yokluğunda salçayla yaparlarmış Ayvalık tostunu. Ben hiç yemedim öylesini. Ama söylenene göre o da güzelmiş.

Bir de nanecilerden söz eder arada bir Hüseyin. Birinin ismi Ferhat’mış, öbürünü hatırlamıyor bizimki. “Birine de Sarı diyorlardı ama hatırlayamıyorum şimdi, Ferhat’a mı diyodular…” Neyse, bilen bilir. İnsanın yanına gelir, şapkasından, saçından, bir şeyinden esinlenip mani düzer ve her seferinde de şöyle bitirirlermiş: “Ne güzeldir yemesi nane şeker!” Atışırlarmış da ozanlar gibi. Meğer bir de enişte-kayınço imişler. Bu bir satış stratejisi miydi yoksa hep mi didişirlerdi böyle? Evde nasıldılar kim bilir…

Dondurmacılardan da Nergis adında biri… Yine üç tekerlekli arabasıyla, sokaklarda gezer, çocuklara dövme dondurma satarmış. Nerbil dermiş herkes ona. Nergis, kadın ismi gibi geldi de kendi mi değiştirdi acaba? Buralarda, nüfustaki adını kullanmamak nedense çok yaygın zaten. Nüfusta Fatma mesela, herkes Neriman diyor. Nüfusta Hasan, herkes Mehmet diyor. Soruyorum nedenini; kimse tam bir cevap veremiyor. Çift isimli de değil bu insanlar ki birini kullanıyor diyelim. Anlamadım gitti.

“Bir de mısırcı vardı…” diyor Hüseyin. Yazmam hoşuna gitti anlaşılan; anlattıkça açılıyor J Beyaz emaye kovada haşladığı süt mısırları satarken bağırırmış: “Dumanı da caba, dumanı da caba…” Çocuklar bunu duydular mı koşarlarmış hemen, ‘caba’, yani bedava olanı isterlermiş. Mısırcı da kovanın kapağını açar, koklatırmış mısırları.

O kadar eski değil ama, bir de simitçi amcamız vardı yakın zamana dek. Sabah en erken saatte adaya gelir, simitlerini arabasına yerleştirir, duruma göre ya Taş Kahvenin önünde ya Kooperatifte uyuklayarak satardı simitlerini, poğaçalarını. Kaç yaşındaydı bilmiyorum ama çok yaşlı bir hali vardı. Her zaman bitkin, hep uykusuz. Sıcaksa dışarıda, soğuksa içeride, bir sandalye çeker, başını önüne eğer ve uyurdu alenen. Biz simidimizi çoklukla kendimiz alır, parayı arabanın içine bırakırdık. Bazen uyanırdı, bazen fark etmezdi bile. Gün geldi görünmez oldu simitçi amca. Bir, iki, derken meraklandık. Simit de bulamaz olmuştuk kahvaltı etmek için. Sorduk, soruşturduk. Meğer yılbaşından hemen önce, yine uyuklaya uyuklaya arabasını iteklerken, iyice daldı herhalde, denize doğru sürmüş. Arabanın ağırlığıyla o da yuvarlanıvermiş sulara. Bereket boğulmamış, ama bayağı ıslanmış. Ondan sonra da gelmedi. ‘Hastaymış’ dediler; bir daha sormak içimden gelmedi. Şimdi bakkallardan alıyoruz simidimiz. Simitçi amcanın yerini doldurmaya kimse kalkışmadı.
        
      Uyuyanlardan söz etmişken, Hüsnü amcayı es geçemem. Sabahın köründen gecenin on biri-on ikisine kadar Taş Kahve’de mekik dokumak, üstelik bunu çocukluğundan beri yapıyor olmak kolay değil. Arada kestirmek hakkı bence. Hem de öyle rahat, fütursuzca, gürültüden hiiiiç etkilenmeden yapıyor ki bu işi. Evi olmuş bu kahve onun. Evet, evet, kestirmek hakkı. Onu seyretmekse bir keyif.

Bugün Erken Kalktım - I Woke Up Early This Morning


Kentli alışkanlıklarım son mu buluyor acaba? Yapacak işim olmadığında doya doya uyumak, geç yatıp öğleden sonra uyanmak devri kapanıyor mu? 

Bugün de erken kalktım. Üstelik hava yağmurluydu ve dışarı çağıran güneş görünmüyordu. Sahilde kahvaltı fikri sanırım beni ayaklandıran. Börek yeme fikri!

Sevgilimle Taş Kahve’nin önüne geldiğimizde köpekler karşıladı bizi. Her sabah börekçiyi karşıladıkları gibi. Günlük haraçlarını almak istediler ama bu kez olmaz. İçeri girdik, anca ısınan sobanın yanına kurulduk. Yalnız Hüsnü amca, balıkçı Derya ve birkaç kişi vardı. Selamlaşma. Böyle, bir avuç insan sobanın etrafında, iyice aile gibi oluyor. Böreğe davet.

Çay, daha biz söylemeden geliyor. Bu saatte kahvede biten kişi, hele elinde azığı da varsa,  başka ne isteyecek ki? Ohh, mis gibi bir kahvaltı. 

        Bu arada, ocağın duvarında hem AIMA hem !F yazan bir afiş görüyorum. Allah allah? !F geçen sene de buralardaydı ama başkaları organize etmişti sanki. Bu yıl AIMA, (Filiz Ali’nin başında olduğu) Ayvalık Uluslararası Müzik Akademisi girişmiş bu işe demek ki. 25-26-27 Şubat’ta film gösterimleri. Ne çok ve çok yönlü sanat etkinliği gerçekleşiyor Ayvalık’ta, bazen şaşıyorum. Bir anda, hiç olmadık bir zamanda, inanılmaz insanlarla, sergilerle, gösterimlerle karşılaşabiliyorsunuz. Uzun zamandır böyle. Sönüp gitmediğine göre, hep devam edeceğini umabiliriz *̮*

 


Madem uyandık, acelesi olmayan işlerimizi de halledelim bari, dedik ve Ayvalık’a gitmek üzere ayağa kalktık. Ama saat henüz 08:35. Otobüse yirmi beş dakika var. İyi. Biz de dolaşırız. 

Atatürk büstünün olduğu ufak parkta oyalandık biraz; çünkü oradaki ağaçlar her zaman ilgimizi çekiyor. İlk etapta, dutlar. Yaz başında meyvalarına dalmaya bayıldığımız şemsiye dutlar. Kupkuruyken kıvrım kıvrım burgaçları saçlarında kaybolan dutlar. Hepsi birer heykel. Ama biliyorsunuz ki içlerinde can var. Sanki bir sebeple taş kesilmişler de ha deseniz davranıp yürüyüverecekler. 

Onların hemen yanında, tuhaf, ilk kez görüyorum, bir kuru ağaç, yeşermeden çiçeklenmiş. Ne ağacı acaba bu? Daha önce hiç dikkatimi çekmemişti. 


Ve yerde, çoook eskilerden kalma bir ağaç daha. Ne yazık ki sadece kesilmişliğinin işaretiyle ağacın yokluğu kalmış geriye... 



Amaan! Bazen fazla mı duyarlı davranıyorum? Buranın insanları ağacı seviyor. Yalnızca bahçelerine değil, yollara, parklara bile ağaç dikiyor; yazın kovayla su taşıyor. Durup dururken kesmemişlerdir herhalde. Belki hastalandı. Belki kurudu. Gerçi, yanındaki yeşil arkadaşlar yalanlıyor gibi beni. Neyse… Artık gidelim.

Hâlâ erken. Otobüsü beklemeden taksi dolmuşa bindik. Ayvalık’a vardığımızda yağmur hızlandı. İşlerimizi çabucak bitirip Ayvalıkgücü’ne oturduk. Deniz önümüzde uzanıyor. Yağmur ve sis, en yakın adayı bile görünmez kılmak üzere. Martılar, yağmurun su yüzüne taşıdığı balıkları avlıyor. 

  
Sonsuzluk hissi veren muhteşem bir manzara.  Saatlerce oturabilirim. Ama uykum geldi. Evime dönüp uyumak istiyorum.

I Woke Up Early This Morning

Are my city habits ending? Am I not going to sleep as long as I can when I have no work?
I again woke up early today although it was raining and the sun calling me outside was not visible. It was the idea of having breakfast seaside which made me get up. The idea of eating börek!
When we, I and my boyfriend, came in front of Taş Kahve (coffehouse), dogs welcomed us, as they welcome the börek-seller every morning. They wanted their daily tax but no, not today. We went inside the coffehouse and sat near to the stove. There were only Hüsnü Amca (the manager of the coffehouse), fish-seller Derya and some others. Greetings. Like a family around a stove. Invitation to the breakfast.
Tea had come before we asked for. Mmmm, a wonderful breakfast! By the way, I saw an add of AIAM and !F together. !F was here last year too but the organizers were different. This year, it seems that AIMA (Ayvalık International Music Academy) is arranging the activity. Films on February 25-26-27. How many and different art activities are taking place in here; sometimes I just get surprised. All of a sudden, you come across a peculiar artist, an exhibition or demonstration. It has been this way for so long. We can hope that it will last forever. *̮*
“We got up early, then, let’s finish our not-urgent works today.” we said and stood up to go to the center of Ayvalık. But it was 08:35 and there was twenty five minutes fort he bus. OK then. Let’s walk a little.
We spent some time in the park with Atatürk bust, because the trees there always attract us. First of all, the mulberries. The umbrella mulberries to which we love to be coloured by their fruit in early summers. When dry, their curly branches get lost in their hair. Each of them is like a statue. But you know that they’re alive. They seem as if they will move suddenly if you call.
Just beside them, there is a dry tree which had its flowers before its leaves. What kind of a tree is that? I haven’t seen it before.
And, in the middle of the pavement, remnant of a tree. Unfortunately, only its non-existence was left behind…
Ooof! Sometimes I am too much sensitive. People here like trees. They plant trees not only to their gardens but also by the roads, in parks. They carry water in summers. They don’t cut off a tree without a reason. Maybe it was sick. Or maybe it died. Though, the greenness around its root dnies what I say. Anyway… It’s time to go.
It’s stil early fort he bus. We got on a taxi-dolmuş (an ordinary car for transportation, picking up five people at most). The rain was heavier when we reached at Ayvalık. We finished our work fastly and went to Ayvalıkgücü (a coffeehouse. Its name comes from the football team of Ayvalık). The sea was lying in front of us. Rain and fog disabled us to see even the closest island. Sea gulls were catching the fish which rain brought on top of the water. A wonderful scene that gives the sense of infinity. I can sit down and watch for hours. But I’m asleep. I want to go back home and fell into dreams.

Cunda Pazarı - The Open Market in Cunda



Bugün cumartesi, Cunda’nın pazarı…

Perşembe günü Ayvalık’ta kurulanın aksine, bayağı küçük. Buna rağmen, giysiden kuruyemişe, olağan sebze-meyveden yöresel otlara kadar her çeşitten az da olsa var.  Peynir ve zeytin tezgahları zaten baş köşede. Her türlü yeşillik pırıl pırıl ardından geliyor. Köylülerin toplayıp getirdiği otlar da cabası. Bunlar arasında, hatırlayabildiklerim: ebegümeci, ısırgan otu, kuzu kulağı, akkız (şevketi bostan), hardal otu, acı ve tatlı hindiba, turp otu, arapsaçı, cipez (azma), istifno, zoha otu...bir de, içinde bütün bunların ve daha kim bilir nelerin bulunduğu karışık ot öbeği.

İşin en cezbedici tarafı, zahmet edip öğrenir ve biraz yürüyüp toprağı her daim yeşil kalan zeytinliklere gitmeye tenezzül ederseniz bütün bu otları bulabilecek ve kendi elinizle toplayabilecek olmanız. Düşünsenize, doğrudan doğadan alıyor, eve gelip pişiriyor, yiyorsunuz ve karnınız doyuyor. Bence bu muhteşem bir şey!

Ama, bunu yapmaya fırsatınız olmasa bile, pazarda çok az bir para karşılığı bulabiliyorsunuz otları. Çoğu 2-3 lira, akkız ise 5 liraydı bugün. Tabii, şunu da söylemek gerekir ki, adanın pazarı Ayvalık’ın ve Pazar günü kurulan Armutçuk’un pazarından biraz daha pahalı. Her ürün en az 50 kuruş fark ediyor. Yine de, yüklenip taşımaktansa bu küçük meydanı şöyle bir dolaşıp öteberinizi almanın zevkine değiyor. 

Otlara dönersek… Nasıl pişirileceklerini sorduğunuzda, muhtemelen bir yabancı olarak beceremeyeceğinizi düşündüklerinden, hepsini haşlayıp ister zeytinyağı ve limonla ister sarımsaklı yoğurtla yiyebileceğinizi söylüyorlar. Gerçi yalan değil, her birini ağız tadınıza göre soslayıp haşlama yemek elbette mümkün. Karışık otu ise ıspanak gibi pişirince çok lezzetli oluyor; tecrübeyle sabit. Ama yine de, bazı otların kendilerine has pişirilme biçimleri var ki tadına doyum olmuyor.  Özellikle akkız ve arapsaçı, kuzu etiyle harika oluyor diyorlar. Ben, tavuğun beyazıyla yapıyorum ve o da daha az harika değil allah için. 

Bu yıl, bembeyaz yüzleriyle akkızları gördükçe her hafta yarım kilo almadan geçemedim. İnsan bıktığını sanıyor ama, görünce yine dayanamıyor. Gerçi bu iyi tabii, çünkü akız (yani şevketi bostan) güçlü bir antioksidan. Hem de lezzetli bir antioksidan :) 

Nasıl pişirdiğimi artık anlatmam gerek herhalde… Tarifi yarım kiloya göre vereceğim:
Bir baş soğanı kıyıp çok az kavuruyorum ve temizleyip baş parmak uzunluğunda doğradığım akkızları da içine atıyorum. Köklerini de mümkün olduğunca kullanıyorum. İki buçuk bardak su ile düdüklüde kırk dakika kadar pişiriyorum çünkü aslen bir diken olan akkız zor pişiyor. Ama sert yemeye razıysanız daha az pişirmek de mümkün. Sonra, düdüklüyü açıp içine kuşbaşı tavuk parçalarını atıyorum. Onlar da pişince, bir limon, un ve biraz sudan oluşan terbiyeyi katıp bir taşım kaynatıyorum.

Today is Saturday, the day an open market is regualrly set up in Cunda.

Compared to the one in the central Ayvalık (on Thursdays), the marketplace in Cunda is rather small. However, although few in amount, you can find almost everything necessary, dairy products, clothing, nuts, ordinary fruit and vegetables and local ones.

Cheese and olive stands come first. All kinds of green vegetables follow. And just beside, different eatable plants that are picked up by the villagers... Among them, here are the ones I can remember at the moment: marsh-mallow, stinging nettle, sheep’s sorrel, blessed thistle (akkız in local language, meaning “white girl”), white mustard,  sour and sweet chicory, radish leaves, fennel, cibez (a local word for the leaves of cabbage), dittany, goldenfleece….and a mixed plant heap in which all these can be found together.

What is most attractive is that if you take the trouble and learn, and if you walkthe way to the olive gardens under which it is almost always green, you can find and pick up all these plants by yourself. Think for a while! You get them directly from the nature, bring them home and feed yourself. To me, this is a great thing!

If you don’t have the opportunity to do this, you can buy them in the market very cheaply. Most are 2-3 liras, the blessed thistle was 5 liras today. I have to mention that the market of the island Cunda is a little more expensive than those set up in Armutçuk district and Ayvalık center. Each product differs at least 50 kuruş. But it’s still preferable if you stay here, as it is a pleasure to buy the stuff walking around this tiny market, instead of carrying heavy bags from distances.

Let’s turn to the issue of plants again... When you ask the sellers for the methods of cooking, you are told to boil them all and eat either with olive oil and lemon or with yogurt and garlic. This is most probably because they think, being a foreigner, you cannot cook them properly. Or maybe they feel lazy about giving detailed recipes.  What they say is not wrong actually. Each plant is very delicious with any kind of sauce. The mixed plant is good also when it’s cooked like spinach. But some plants need a special type of cooking. Especially the blessed thistle and the fennel are great with lamb. I use chicken and it is not less great, believe me.

This year when I saw their shining white faces, I couldn’t manage to pass by without buying half a kilo of blessed thistle. I thought I would lose my desire, but no! I haven’t. Actually this is good; because it is a strong antioxidant. A delicious one!

I think I have to tell how I cook it now. The recipe is for half a kilo:

I chop an onion and fry it a while with some oil, preferably olive oil, in a pressure cooker. I put the clean and sliced blessed thistles (using the roots also) with two and a half glasses of water into the cooker and close its cover. It is cooked for about 40 minutes since it is a thistle and therefore, tough. Then, I open the cooker and put sliced chicken. After it is also cooked, I put a sauce made by the juice of one lemon, some flour and water. After boiling a few minutes more, it is ready to eat.

NEDEN AYVALIK’TAYIM, NEDEN YAZIYORUM - WHY I AM IN AYVALIK, WHY I AM WRITING


Kendimi bildim bileli Ayvalık, özellikle de Cunda, yurdum oldu. Aslında Ankaralıyım. Beş yaşından beri her yaz geliyordum buraya; üç ay, bu cennette varolmanın tadına varıyordum. En içten dileğim, bizimkilerin buradan bir ev almasıydı, çünkü yaz-kış ulaşabilmek istiyordum Ayvalık’a. O zamanlar buraya yerleşebileceğimi bilmiyordum.
Şimdi, burada yaşıyorum.  Baktım bizimkilerin bir yer edinmeye niyeti bile yok ve baktım, benim için yaşamak demek burası demek ve hayallerimi zor da olsa kendim gerçekleştirmem gerek, 30’lu yaşlarımın başında kırılan hayatımın rotasını birdenbire buraya çevirdim.  Bana kalsa belki yine akıl edemezdim bunu ya, neyse ki kalbim dümeni kaptı, baş ipimi sevdiğimin uzattığı ele bıraktı ve böylece, bu kıyılara demirledim altı yıl önce.
 İnsan bazen ne kadar kör ve ne kadar sağır olabiliyor. Arzu ettiği şey gözünün önündeyken nasıl da göremiyor gerçekten.
Buraya yazın gelmekle (ne kadar uzun kalınırsa kalınsın), burada yerleşik olmak arasında dağlar kadar fark var. Eminim her yer için bu böyledir ama Ayvalık, ve Cunda, öyle ki… sanki gizlediği incilerini örtmek için binbir güzelliğe bürünmüş de kısa süreli ziyaretçilerini onlarla oyalıyor, asıl mütevazı mücevherlerini ona yüreğini verenlere sunuyor. Bilmem :) Belki de bana öyle geliyor. Bana kalsa, buranın her taşı, her kuşu, yazı, kışı, her şeyi bir başka güzel.
Bu yüzden olsa gerek, altı yıldır daha da yoğun olmak üzere, tanıdığım, sevdiğim herkese burayı anlatıyorum. Önce büyük bir aşkla, coşkuyla.  Sonra, endişe kaplıyor içimi. Çünkü değişiyor buralar. Maalesef bir yağmaya kurban gideceğinden korkuyorum yuvamın. Diğer birçok eşsiz diyarda olduğu gibi. Paylaşmak, göstermek, sevdirmek arzusuyla, korumak, kollamak kaygısı çatışıyor zaman zaman.  Ama içten içe biliyorum ki, insan sevdiğini korur ve tanıdığı, bildiği bir şeyi sevebilir ancak.  
Ben de, bir dostun önerisine kulak verdim; yana yakıla nefes tüketmenin yanı sıra, daha çok kişiye ulaşmak adına bu günlükleri yazmaya karar verdim. Sevdiğim Ayvalık’ı, evimi, burayı benim gibi sevecek insanlara anlatmaya…  Kim bilir, belki bir gün bu güzelliği savunmada onlara ihtiyacım da olur. Ve belki bu kez, yağmaya, talana, sadece kendi sahip olmak için çitler çevirip izole eden anlayışa, yerel yaşamı süpüren tektip betonlaşmaya karşı, bir kez olsun alıp-satma, yok etme olmadan,  bir arada, bir bütün olarak yaşamanın zaferini kutlarız.
Bir süredir zihnimde kaynamakta olan düşünceler, bu sabah Taş Kahve’nin önünde, güneşin altında huzura bakıp çay içerken yavaş yavaş tütmeye başladı bedenimden. Buharlaşmadan onları yakalamalıydım. Bozukluğu çay tabağına bıraktım ve son olarak, nerede durduğumu görmek için bir fotoğraf çektim.

Ayvalık, especially Cunda, has been my hometown as far as I know myself. I’m from Ankara actually. I had come here since I was five and felt to live in this heaven for three months. My deepest desire was my parents’ owning a house here because I wanted to come any time of the year. At that times, I was disable to think that I can lead my life here.
Now, I’m living in this beautiful town. When I realized that my parents wouldn’t even intend to buy a house and that I had to realize my dreams by myself, even though it’s quite hard, I turned my way towards Ayvalık after my life had been broken in my early 30s. Probably I wouldn’t be able to do this, but fortunately my heart put my string into my lover’s hands and I anchored near this coast six years ago.
How a person can be so blind and deaf! How s/he cannot see the very beloved thing/place when it is obviously in front of her/him.
Anyway… Coming herefor summer holidays (no matter how long it is) is considerably different from settling here. I’m sure it is the same for anywhere. But this region is somehow…like dressed with lots of beauties distracting the short-term visitors’ attention so that it can hide its secret pearls and diamonds and display them to the ones who give their hearts to her.
Maybe because of these thoughts, I’ve been telling Ayvalık stories to everybody more intensely for six years. In the beginning, with love and enthusiasm; then, with worry and suspicion. Because, things are changing. I have the fear that my home is going to be destroyed soon, like in many other marvelous places. My will to explain, to share, to show contradicts the instinct to protect it.
However, actually I feel that something is protected only when it is loved and one can love something only when s/he knows and understands it.
That’s why I listened to one of my friend; I decided to write a blog to make people (who I hope will love here as much as I do) learn the obvious and also secret properties of Ayvalık. Who knows? Maybe one day I will need them in order to defend this beauty of the world and maybe this time, we will celebrate the victory of living altogether in harmony against destruction, isolation, one-typeness and concrete construction that wipes out local lives.
These thoughts were boiling in my mind for some time. They began to fume this morning while I was looking at the peaceful landscape under the shining sun in front of Taş Kahve. I was to catch them before they steam away. I put the coin onto the table and lastly, I took a photo in order to see where I am.
